The recipe I’m gonna share today is technically considered a side dish but I’m all for tweaking recipes to make it a little more conducive to having a family so before we start I should say this is a side dish but I will share some things I’ve tried that turns this into a one pan casserole real quick and tastes just as good. I initially found this recipe on allrecipes.com when I was looking at changing up a side for a holiday dinner and it’s now a staple on my menu and also a favorite of everyone in my house.
It’s called Broccolli Cauliflower Casserole, the prep time is quick,cooking time is a little longer how I cook it but it’s preference right.
Ingredients: 2 cups of broccolli, 2 cups of Cauliflour, 2 eggs, 1/2 cup of mayonnaise, 1/2 cup chopped onion, 1 cup of shredded cheese,divided , 1/2 cup butter melted, 1 15ounce package of seasoned croutons crushed.
*** when I cook this recipe I double everything only because it’s a favorite and I know it’ll get eaten. I also don’t use croutons instead i opt for crunchy onions as a topper and I put it on after its cooked. To turn this into a one pan dish I have used chicken fillets and sausage, it can be added before going into the oven. For my vegetarians there are plenty of no meat options you can add in as well.
Step 1: preheat oven to 350 (I set to 425) Step 2: Put broccoli and cauliflower in separate saucepans and pour enough water into the saucepans to cover the vegetables completely, bring to a boil and cook until tender, 3 to 4 minutes. Drain each and mix in a 11×7 inch baking dish
**** Again I dont preboil my veggies because I like some crunch to my broccoli and cauliflower so I use a 9×12 baking dish spray with cooking spray cut my veggies up and place in the dish
Step 3: Beat eggs in a bowl until creamy. Mix mayonnaise, onion, and 1/2 cup cheddar cheese into the eggs; pour over the vegetables. Pour melted butter over the broccoli mixture and top with the remaining cheddar cheese. Sprinkle croutons over the entire dish Step 4 : Bake in preheated oven until brown and bubbling, about 40 minutes
Again its preference and keep in mind if adding meat of any kind your cooking time might be longer hence why I set my oven higher then the heat listed in recipe. Tonight however I breaded chicken fillets and cooked them up to go with
Now as you prepare this u can decide whether u need an extra carb like rice,potatoes or pasta to go along with the dish but I found this checked off all the boxes in my house and I simply serve the casserole along with our meat choice on it’s own. Try it my way or follow the recipe either way I think this will become a favorite in your house as it did in mine. My kids dont like broccoli or cauliflower any other way now. Next time I’ll talk about meal plans, saving money on groceries and finding new ways to feed a family that all have different tastes without wanting to pull your hair out
